Zucchini Cinnamon Oatmeal Muffins

I don’t know what possessed me to make muffins on a 90 degree day with no AC but I’m glad I did cause these were delicious!



Ingredients

1 cup flour

1 cup shredded zucchini

1/2 cup brown sugar

1/2 cup sugar

2 eggs

1 cup melted butter

1 teaspoon cinnamon

1/2 cup quick oats

1/2 tsp baking powder

1/2 tsp baking soda

1/2 salt

Topping

1 tablespoon room temperature butter

1 tablespoon brown sugar

1 tablespoon quick oats

1/2 tablespoon flour




How to:

Mix all dry ingredients in a bowl.

Add your shredded zucchini (make sure you squeeze out all excess water with cheese cloth or a paper towel) and mix into your dry ingredients.

Then add all wet ingredients and mix together.

In a separate bowl add your topping ingredients together until you get a nice clumpy mixture!

Pour the muffin mixture into pre greased baking tins, crumple the topping on the tops with your hands and add into the oven at 350 for 20-25 minutes!

If you are at a higher altitude like me those extra 5 minutes really do the trick. How to:
