Vegetable Ramen

Another hot meal on a hot day… what can I say? I like to suffer! Haha




Ingredients:


1 bag of frozen vegetables or at least one pot full of vegetables of your choice with enough water to just cover the veggies in the pot.

2 teaspoons thick soy sauce

1 tablespoon minced garlic

1 tablespoon sesame seed oil

1 tablespoon dried minced onion

2 teaspoons salt

Juice from half a lime

1 1/2 teaspoons pepper

1/2 cup chopped red onion

7 chopped baby carrots

2 chopped peppers

1 baby bok choy

1/4 cup soy sauce

1 tablespoon chopped cilantro

5 cloves of chopped garlic

5 packs of ramen noodles.

2 slices of fish cake

Sprinkle of furikake

Sliced lime

1 egg either soft boiled or poached

Topped with cilantro



How to:

Start with a bag of frozen vegetables.

I had leftovers from all my scarps I’ve been saving. I’ll have more info on that later. But you can use anything you like!

For example, carrots, spinach, lots of onion, cucumbers, celery, zucchini, cabbage, green onion, squash, and lettuce!

Add your veggies to a big pot of water and add 2 teaspoons of thick soy sauce or 1 tablespoon normal soy sauce, 1 tablespoon minced garlic, 1 tablespoon sesame seed oil, 1 tablespoon dried minced onions, 1 teaspoon salt, and 1 teaspoon pepper. Cook on high for two hours stirring every 20-30 minutes.

Once tills boiled, separate the veggies from the broth. Keep it in a bowl to the side.

In the same pan sauté 1/2 cup chopped red onion, 5 chopped garlic cloves, 7 chopped baby carrots, two chopped peppers of your choice, 1/2 tablespoon sesame seeds, and 1 tablespoon chopped cilantro in 1 tablespoon sesame seed oil.

After they are soft, add the broth back into the pot, add 1/4 cup soy sauce, half a limes juice, and salt and pepper to taste.

Bring to a boil and add in your bok choy and noodles. Once they are soft, add to a bowl and top with cilantro, sesame seeds, seaweed, lime, fish cake, and a poached egg.

Now for my bag of frozen veggies! Anytime we have fresh vegetable scraps I save them in a freezer bag to use later on for vegetable broth! I had to stop saving stuff because my freezer is so full of the bags! But it is such an easy way to spread out those vegetables and get everything you can from them! It sure helps that it’s delicious too!
