I just had to share this. I’ve always wanted to cook a whole chicken! I’ve always just gotten them from Costco but for only $7 at Trader Joe’s I couldn’t pass this up!
I also got these delicious HoneyNut Squash from Trader Joe’s! they are so sweet and yummy! Don’t pass these up if you happen to see them in store!
Here’s the recipe!
Oven Roasted Chicken - Dutch Oven
Ingredients
5lb raw chicken
1 stick salted butter softened
1 tablespoon fresh chopped rosemary
1 teaspoon salt
1 tablespoon dry thyme, basil, lavender, sage mix (I like Herbs and Provence)
1 teaspoon pepper
1 teaspoon onion powder
1 tablespoon minced garlic
3 sticks fresh rosemary
How to:
To prep your chicken oat it dry and set inside your Dutch oven
Mix together your softened butter with your fresh chopped rosemary and other seasoning in a bowl.
With your hands scoop about 1/4 of the butter and rub it underneath the skin of the breasts of your chicken.
Next, scoop out more with your hands and start rubbing it evenly around your whole chicken until you’ve used all the butter.
Put three sticks of rosemary inside your chicken and the tablespoon of minced garlic.
Feel free to sprinkle a bit more salt, pepper, and Herbs and Provence to the top too!
Put your lid on your chicken and add it to your oven to cook for 1 hour and 10 minutes at 450 degrees.
Once it’s ready take it out and let with the lid off the pot for 5-10 minutes before serving!
Honeynut Squash
Ingredients
4 honeynut squash
Salt
Pepper
Olive oil
Cut your squashes in half and scoop out the inside seeds and discard.
Evenly coat each one in olive oil, salt, and pepper. How much or how little is completely up to personally preference! But I add a decent amount of each!
Put on a cookie sheet flat side up and cook in the oven on 450 degrees for 45-50 minutes or until you can poke through with a fork! Take out and serve!
