Today I didn’t want to eat much for breakfast. It was already a little late and my husband was coming home for lunch so I decided to make a mini two egg skillet just to hold me over until lunch time!
it was so simple but so delicious! my husband wanted one so bad that I made it again for lunch! ill definitely have to keep playing with with whole kale and eggs thing cause I think I just stumbled across my new favorite thing.
Ingredients
Two eggs
1/4 cup chopped kale
1 tablespoon chopping onion
1 tablespoon feta
1 teaspoon butter
Pepper
Everything Bagel Seasoning
How To
Preheat oven to 325 and butter your skillet.
Crack one egg into the skillet and sprinkle on half your kale. Next crack open your other egg into the skillet, add the rest of the kale, the green onion, the feta, and the pepper. Add the skillet to the oven once it’s done on the middle rack for 12 minutes. pull it out, top it worked Everything Bagel Seasoning, and serve on top of a pot holder! I like the cork ones!
